Eggs, toast and bacon.
YUM-O.
Please tell me you had these as a child.
What did your mom call them?
We call them Hole in the Middle (today they are Heart in the Middle because Valentines day is coming soon) and sometimes we call them Eggs in a Nest.

OK, let's get to work.

Cut a hole in the center of your bread - whatever shape your little heart desires.  (Get it...hehehe....I'm feeling spunky today! :)
Melt a little butter in your skillet.
Put your holy piece of bread down.
Break an egg and drop it in the hole.
After a minute or two flip your toast/egg.
Girl likes for me to break the yolk before flipping hers, so I do.
The Boys like the yolk runny, so I leave theirs as is.
Cook until done - whatever 'done' is for you.
Every morning I line their food up just like this on the counter in-between the kitchen and dining room.
Send them off to school with full bellies.

Yes Sarah these plates are from Korea. I got them in Yeoju at the blue & white factory. They sell them on post but they are marked up at least x's 4!! I will be making a trip to Yeoju in the spring if you want to tag along!

egg in the middle.
the trick is to lift the bread so the egg white runs across the bottom before it sets. Plus, lots of butter. Seems like that is the trick to a lot of things, though.

Yes! We called it Toad in the Hole or Egg in a Nest, and I still make them for my kids! Same thing with mine, too - Boy likes runny yolks and Girl likes hers cooked solid-hard so she can pop it out and throw it away and only eat the white!

Never had it but have wanted it ever since seeing Cher make it in Moonstruck. Why, then haven't I tried making it myself? Love the pottery.
