Our friends arrived in Seoul this past Sunday.  It was a long and exhausting flight for them.  Upon their arrival, I had dinner waiting for them, of course I made their favorites, pork green chili smothered burritos and my infamous (infamous in my own head) pinto beans. (S loves the beans, R loves the burritos, I love them both)  I didn't take a picture of either, so I cannot post the recipes until I make them again.  Sorry, I know you are all disappointed.

It was great seeing them again, it has been 8 whirl wind months since we left the states, and our friends were the last people we saw (that we knew) before we left.  Their kids have grown, E is taller, and has more of a "pre-teen" face, when I left she was a little girl.  Now she has braces, which are very cute on her, and is acting more grown up.  J's face has slimmed a bit, but he is still the same little boy as when we left, only with braces.  

We let them rest on Monday before we started our race around Seoul.  We did take them to lunch at our favorite little hole in the wall, The Mackerel Lady.  Now, I wasn't sure how this place would go over because S does not eat fish, but, as with everyone else we have taken here, SHE LOVED IT!!!  She even ate the fish!  Go figure.


The kids also loved it, E more than J.  At least 5 times E said "this place is AWESOME!", "I love this place", and "Korean food is better than American food"!  I guess we will be going back here a couple of times during their visit.

 
 

The original recipe is here.  This was good, but next time I will do it a little differently.  First off I would add ham, maybe a little mushroom, chop the zucchini more or maybe even puree it, (for the kids) and add a little salt and pepper.  I know it wouldn't be a "vegetable" frittata anymore, but it would be good! 

Recipe:

8 slightly beaten eggs
1 TBL fresh basil or 1 tsp dried
2 TBL olive oil
1 cup frozen whole kernel corn
½ cup chopped zucchini
¾ cup chopped cherry tomatoes
½ cup shredded cheddar cheese

Directions:

In a medium bowl combine eggs and basil; set aside.  Heat oil in a large broiler proof skillet; add corn, and zucchini.  Cook and stir for 3 minutes; add tomatoes.  Cook uncovered over medium heat about 5 minutes or until vegetables are crisp-tender, stir occasionally. 

Pour egg mixture over vegetables in skillet.  Cook over medium heat.  As mixture sets, run a spatula around edge of skillet, lifting egg mixture so uncooked portion follows underneath. Continue cooking and lifting edges until egg mixture is almost set, surface will be moist, sprinkle with cheese. 

Place under broiler 4-5 inches from heat.  Broil 1-2 minutes or until top is just set and cheese is melted.

I was talking on the phone with my sister while making the bows for these Christmas ball.  Not very exciting, but K. understands.

 
 

Many months ago Boy 2 told his modeling agent that he would only work 1/2 days, not full days. She noted this and had not ask him to work full days for a long time.  Something came up, and 2 different companies wanted him to work, back to back, 2 FULL DAYS!! AUGHHH...  Mrs. S came over and ask him if he would work 2 days, he told her "NO, I will only work one day".  He was very insistent, one day was all.  She begged, he still said "NO", then she bribed....it took her a while, but she did it,   she was able to bribe him to work 2 FULL days in a row, by paying him his salary PLUS a Nintendo DS.   

Way to work her my boy!  I've never been so proud. :)

After that they stopped giving him props and posed him with this little girl. I was worried for her safety, but fortunately he did not break anything on her. 

The next day Boy 2 worked for one of my favorite companies, Commencer.  I love the clothing line, and the photographer is GREAT with Boy 2! 

Boy 2 started playing around and the photographer ate him up! 

Below Boy 2 is playing Nintendo DS with his fan club, including the owner of the clothing line in the black jacket.  These people LOVED him and catered to his every whim.

A week ago Monday it snowed here.  Boy 3 saw the snow and told his Daddy he wanted to touch it.  He was so cute jumping around in the snow trying to catch it. The snow didn't last, but I expect this will not be our last.....

 
 

Oh baby, this is a favorite dessert in  our house! 

Chocolate Mousse in Chocolate Cups

4 egg yolks
¼ cup sugar
1 cup heavy whipping cream
1 cup semisweet chocolate chips
Chocolate cups  (see below)
1 ½ cups heavy whipping cream

Beat egg yolks in a small bowl on high speed for 3 minutes or until thick and lemon color.  Gradually beat in sugar.  Heat 1 cup heavy whipping cream in 2 quart saucepan over medium heat just until hot.  Gradually stir in at least half  of the hot cream into egg yolk mixture.  Then stir into the hot cream pan.  Cook over low heat about 5 minutes, stirring constantly, until mixture thickens DO NOT BOIL.  Stir in chocolate chips until melted.  Cover and refrigerate about 2 hours stirring occasionally, just until chilled.  Meanwhile prepare chocolate cups. 

Beat 1 ½ cups whipping cream in chilled medium bowl until stiff.  Fold chocolate mixture into whipped cream.  Pipe or spoon mixture into cups. 

CHOCOLATE  CUPS

Wrap the insides of eight 6-ounce custard cups with aluminum foil.  Heat 1 1/3 cups semisweet chocolate chips in a heavy 1 quart saucepan over low heat, stirring constantly, until melted and smooth; remove from heat.  Spread about 1 ½ tablespoons melted chocolate over foil on bottom and about 1 ½ inches up side of each cup.  Refrigerate about 30 minutes or until chocolate is firm.  Carefully remove foil from custard cups, then remove foil from chocolate cups.  Refrigerate chocolate cups.

Makes 8 servings.

Boy 2 had a photo shoot, Boy 3 came along with us.  They needed an extra child, so they put Boy 3 to work.  He loves to work, so he didn't mind at all.  Only one problem....I looked at him and thought to myself, "surely not".  THEN my friend, whose daughter was doing this shoot also, ask me the same question I was asking myself...."are they dressing him as a girl"? 

Sometimes in Korea the outfits are a bit different in than in the US, the outfit he was wearing was blue and yellow, so I kept thinking, surely not.  It had a bow tie, but so did Boy 2's outfit...Boy 3's was a little more girly, but still, he was wearing blue and yellow, maybe it is a boy's outfit, right?!?!

I finally ask the modeling agent, Mrs. S, are they dressing him as a boy?  She balked at the thought and said, "No, he is a boy", then she looked at him, her face changed, she looked at the ladies dressing him, they started speaking Korean back and forth, they looked at him, they all looked at each other, they all stopped, had shocked looks on their faces and all started laughing!!  It was true; they dressed my BOY as a GIRL!!!!  Oh the therapy he will need when he is older. 

He didn't mind though, he was just happy to be working.

.........for sick children!  Aughh....I haven't forgot about my blog.  I've been wanting to write, but between myself and all the kids being sick, doctor appointments, dental appointments, photo shoots, holiday celebrations, being in a murder mystery, folding socks and guest arriving this weekend, I just haven't had time!!  I still have 2 kids home sick today, and only one holiday celebration to attend today...............maybe I can write tomorrow.
