This is what I made with the chum chi I bought at the fish market.   I have made this before and we loved it.  This time it was even better because my fish was so fresh!  I got this recipe from my good pal Tyler Florence, it is in his cookbook Eat This Book.  It is a great cookbook, I suggest you buy it.  Maybe if I sell enough of them Tyler will come over and cook for me. 

Pan-Seared Tuna with Avocado

Extra-virgin olive oil
4 (6 oz) blocks of sushi-quality tuna
Kosher salt & fresh ground black pepper
1 recipe Ginger-soy vinaigrette (recipe follows)
2 ripe avocados, halved, pitted, peeled and sliced

Place a large skillet over med-high heat, and coat with 2 counts of olive oil.  Season tuna generously with salt and pepper.  Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust.  Pour half of the vinaigrette into the pan to coat the fish.  Remove the fish to plates and serve with the sliced avocado and the remaining vinaigrette drizzled on everything.

 

Ginger Soy Vinaigrette

 1 bunch cilantro, finely chopped
1 jalapeno sliced
1 tsp minced fresh ginger
1 garlic clove, minced
Juice of 4 limes
¼ cup low-sodium soy sauce
¼ tsp sugar
¼ cup extra-virgin olive oil
Kosher salt and fresh ground black pepper


Mix all together until well blended.

Gosh, you know I love you dearly, but that looks awful! Why is it pink and raw looking? Do your kids eat this? A huge difference between me and you. I have no special, gourmet, type cooking knowledge or desire in me. The eggplant parmesan looks very good, but Kurt wouldn't eat it. That is why I have a half of cow in my freezers. Meat, potato type family!!! You are a great cook though and I envy you!! Just messing with ya!!!

Ya know Jana, I expected that comment from you! Seriously, I thought "Jana is going to comment on how raw looking my tuna is". Well, it is just seared on the outside, yes, raw in the middle. You should try it, because it is SO good this way! Sushi is the way to go my dear friend; you haven't lived until you have eaten a little sushi! I do cook my kids tuna all the way through for them, and if you were to eat this at my house, if you insisted I would cook all the way through for you as well - even though you would lose so much of the flavor. (Did you notice I spelled lose correctly)

WOW! I almost bit my computer screen that looked so good! We LOVE tuna and if I knew how grow letters imagine the word love as high as a 50 story building! Sushi is to die for! We can't get enough. Tomorrow Chris is going fishing for local tuna- I am already salivating. Unfortunatly the avocados here and not ripe and they are very expensive. If I buy them they sit around too long....there's such a small window of opportunity for a good avocado and tuna meal. god how i miss good food. I've had it with greek salads!!!!!

Randy - so good to see you back on line. How was your time with your Mother? Jana is crazy isn't she...no sushi in her diet, poor girl, doesn't know what she is missing.

Mom, thanks for the compliment, I know you are just buttering me up so I will cook this for you when you come out. I can't wait to see you in 2 weeks.

And Jana - I made a 3 herb steak with grilled peppers, baked potatoes and salad this week, I guess I should have blogged that huh? Next time I make steak I will put it on the site.
